Se’if 1א׳
חַיָּה טְהוֹרָה, חֶלְבָּהּ מֻתָּר, וְדָמָהּ (אָסוּר) וְטָעוּן כִּסוּי. וַחֲכָמִים נָתְנוּ סִימָנִים, מִפִּי הַשְּׁמוּעָה, בְּקַרְנוֹתֶיהָ אִם הֵם מְפֻצָּלוֹת (פֵּרוּשׁ שֶׁהַרְבֵּה פִּצוּלִין יוֹצְאִין מֵהֶם), וַדַּאי חַיָּה טְהוֹרָה הִיא. וְאִם אֵינָם מְפֻצָּלוֹת, צָרִיךְ שֶׁיִּהְיוּ בָּהֶם שְׁלֹשָׁה סִימָנִים: כְּרוּכוֹת, וַהֲדוּרוֹת וַחֲרוּקוֹת (פֵּרוּשׁ כְּרוּכוֹת עֲשׂוּיוֹת גְּלָדִים כִּבְצָלִים הֲדוּרוֹת, עֲגֻלּוֹת וְלֹא רְחָבוֹת חֲרוּקוֹת, שֶׁיֵּשׁ בָּהֶם חֲרִיצִים סְבִיבוֹתָם תְּכוּפִים וּמֻבְלָעִים זֶה בָּזֶה) וְהוּא דְּמִבְלְעוּ חִרְקַיְהוּ. וְאִם חָסֵר אֶחָד מֵאֵלּוּ הַשְּׁלֹשָׁה סִימָנִים, חֶלְבָּהּ אָסוּר.
A clean wild animal: its fat is permitted, and its blood is (forbidden) and requires covering. And the Sages gave signs, from received tradition, in its horns: if they are branched (that is, that many branchings issue from them), it is certainly a clean wild animal. And if they are not branched, there must be in them three signs — wound, rounded and grooved (that is, wound, made in layers like onions; rounded, round and not broad; grooved, that they have notches round about them, close together and sunk one into another) — and that is provided that their grooves are sunk deep within. And if one of these three signs is lacking, its fat is forbidden.
Se’if 2ב׳
בַּמֶּה דְּבָרִים אֲמוּרִים, בְּמִין שֶׁאֵינוֹ מַכִּירוֹ. אֲבָל ז' מִינֵי חַיָּה הָאֲמוּרִים בַּתּוֹרָה, אִם הָיָה מַכִּיר אֶחָד מֵהֶם, אֲפִלּוּ לֹא מָצָא לוֹ קַרְנַיִם, חֶלְבּוֹ מֻתָּר וְדָמוֹ טָעוּן כִּסוּי.
In what case are these words said? In a kind that he does not recognise. But the seven kinds of wild animal that are named in the Torah — if he recognised one of them, even though he found no horns upon it, its fat is permitted and its blood requires covering.
