אֵין מַחְזִיקִין דָּם בִּבְנֵי מֵעַיִם, כְּגוֹן בַּכֶּרֶס וּבַקֵּבָה וּבַדַּקִּין. וּבַחַלְחֹלֶת (פֵּרוּשׁ, הַכַּרְכָּשָׁא, וְהוּא הַמְּעִי הַדָּבוּק בְּפִי הַטַּבַּעַת) בְּלֹא שֻׁמָּן שֶׁעֲלֵיהֶם. לְפִיכָךְ אִם בִּשְּׁלָם בִּקְדֵרָה בְּלֹא מְלִיחָה, מֻתָּר, אֶלָּא אִם כֵּן אַסְמִיק. הַגָּה: וְכָל שֶׁכֵּן אִם נִמְלְחוּ בִּכְלִי שֶׁאֵינוֹ מְנֻקָּב, דְּמֻתָּרִים (מָרְדְּכַי פכ"ה). מִיהוּ לְכַתְּחִלָּה צְרִיכִים מְלִיחָה בִּכְלִי מְנֻקָּב, וַהֲדָחָה תְּחִלָּה, כִּשְׁאָר בָּשָׂר (מָרְדְּכַי וְאָרֹךְ). וְיֵשׁ חוֹלְקִים בַּכָּרֵס, וְאוֹמְרִים דְּמַחֲזִיקִין בָּהּ דָּם, וַאֲפִלּוּ בְּדִיעֲבַד אָסוּר בַּכָּרֵס וּבֵית הַכּוֹסוֹת כִּשְׁאָר בָּשָׂר (מָרְדְּכַי ור"ן ואו"ה). אֲבָל שֻׁמָּן שֶׁעֲלֵיהֶם, דִּינוֹ כִּשְׁאָר בָּשָׂר. לְפִיכָךְ כְּשֶׁמּוֹלְחִים הַחַלְחֹלֶת וּשְׁאָר מֵעַיִם, אֵין מוֹלְחִין אוֹתָם בְּצַד פְּנִימִי מַעֲבַר הַמַּאֲכָל, אֶלָּא בַּצַּד הַחִיצוֹן שֶׁשָּׁם הַשֻּׁמָן דָּבוּק. הַגָּה: וְאִם מָלַח הַחַלְחֹלֶת מִצַּד פְּנִים וְלֹא מִצַּד חוּץ, הֲוֵי כְּאִלּוּ לֹא נִמְלְחָה כְּלָל, וְאִם נִתְבַּשְּׁלָה כָּךְ, טְרֵפָה, אִם יֵשׁ עָלֶיהָ שֻׁמָּן מִבַּחוּץ. וְאִם לֹא נִתְבַּשְּׁלָה עֲדַיִן, יַחֲזֹר וְיִמְלְחֶנָּה מִבַּחוּץ. וּמֻתֶּרֶת (אָרֹךְ בְּשֵׁם הָרַשְׁבָּ"א). בֵּיצִים הַנִּמְצָאִים בָּעוֹפוֹת לְאַחַר שְׁחִיטָה, אִם לֹא נִגְמַר הַחֶלְבּוֹן שֶׁלָּהֶם, רַק הַחֶלְמוֹן לְבַד, צְרִיכִים מְלִיחָה כִּשְׁאָר בָּשָׂר, וּמֻתָּר לְמָלְחָן עִם בָּשָׂר (בֵּית יוֹסֵף סִימָן פ"ז). וְאִם נִגְמַר אַף הַחֶלְבּוֹן, אֲפִלּוּ הַקְּלִפָּה קָּשָׁה עָלָיו כְּמוֹ שֶׁהִיא נִמְכֶּרֶת בַּשּׁוּק, נוֹהֲגִין לְמָלְחָהּ, אַךְ יִזָּהֵר שֶׁלֹּא לְמָלְחָהּ עִם בָּשָׂר (מהרא"י בְּהַגָּהַת ש"ד). מִיהוּ בְּדִיעֲבַד, אֵין לָחוּשׁ. וְכָל שֻׁמָּן, אֲפִלּוּ שֶׁל עוֹפוֹת, דִּינוֹ כִּשְׁאָר בָּשָׂר לְעִנְיָן מְלִיחָה וַהֲדָחָה (מָרְדְּכַי).
We do not reckon that there is blood in the entrails, such as in the paunch and in the maw and in the small intestines, and in the rectum (that is, the large intestine, which is the intestine that is attached at the anus), without the fat that is upon them. Therefore, if he cooked them in a pot without salting, it is permitted, unless it has turned red. Hagah [Rema]: And all the more so if they were salted in a vessel that is not perforated, that they are permitted (Mordechai, chapter "All flesh"). However, at the outset they require salting in a perforated vessel, and washing first, like the rest of the meat (Mordechai and Issur v'Heter haAroch). And there are those who disagree in the case of the paunch, and say that we do reckon that there is blood in it, and that even after the fact it is forbidden in the paunch and the reticulum, like the rest of the meat (Mordechai and Ran and Issur v'Heter haAroch). But the fat that is upon them, its law is as the rest of the meat. Therefore, when they salt the rectum and the rest of the intestines, they do not salt them on the inner side, the passage of the food, but on the outer side, where the fat is attached. Hagah [Rema]: And if he salted the rectum from the inner side and not from the outer side, it is as though it had not been salted at all; and if it was cooked thus, it is a tereifah, where there is fat upon it from without. And if it has not yet been cooked, he goes back and salts it from without, and it is permitted (Issur v'Heter haAroch in the name of the Rashba). Eggs that are found in birds after the slaughter: if their white is not complete, but only the yolk alone, they require salting like the rest of the meat, and it is permitted to salt them with meat (Beit Yosef, siman 87). And if the white too is complete, even if the shell is hard upon it as it is when it is sold in the market, they have the practice to salt it; but he shall take care not to salt it with meat (Maharai in the Hagahat Shaarei Dura). However, after the fact there is no ground for concern. And all fat, even that of birds, its law is as the rest of the meat as regards salting and washing (Mordechai).

בְּנֵי מֵעַיִם בְּלֹא שֻׁמָּן שֶׁעֲלֵיהֶם, אַף עַל פִּי שֶׁאֵין מַחֲזִיקִים בָּהֶם דָּם, מֻתָּר לְמָלְחָם עִם בָּשָׂר. הַגָּה: וְיֵשׁ אוֹסְרִים לְמָלְחָם עִם בָּשָׂר (טוּר בְּשי"א), וְהָכֵי נוֹהֲגִין לְכַתְּחִלָּה, וּבְדִיעֲבַד מֻתָּר (מָרְדְּכַי בְּשֵׁם ר' יוֹאֵל וְהַגָּהוֹת אֲשֵׁרִ"י וְאו"ה בְּשֵׁם אוֹר זָרוּעַ).

שֻׁמַּן הַכַּנְתָּא (פֵּרוּשׁ שֻׁמַּן הַדַּקִים אינטרי"לייא בְּלַעַ"ז) שֶׁעַל הַדַּקִּים, מְלֵאָה חוּטִים דַּקִּים מְלֵאִים דָּם וּלְפִיכָךְ יֵשׁ אוֹסְרִים אוֹתָהּ לִקְדֵרָה, אֲפִלּוּ עַל יְדֵי חֲתִיכָה וּמְלִיחָה. וְעַכְשָׁו נוֹהֲגִין הֶתֵּר, וְאוֹתָם חוּטִין שֶׁל דָּם כְּשֶׁאָדָם בָּקִי בָּהֶם מוֹתְחָן, וְנִפְשָׁלִים הֵיטֵב עַד שֶׁלֹּא יִשָּׁאֵר אֶחָד מֵהֶם.
The fat of the kanta (that is, the fat of the small intestines, interiglia in the vernacular) that is upon the small intestines is full of fine threads that are full of blood; and therefore there are those who forbid it for the pot, even by way of cutting and salting. And nowadays they have the practice to permit it; and those threads of blood, when a man is expert in them, he draws them out, and they are stripped away well, so that not one of them remains.
