Se’if 1א׳

בְּדַם בְּהֵמָה וְחַיָּה נָמֵי אֵין אִסוּר כָּרֵת, אֶלָּא בְּדַם הַנֶּפֶשׁ שֶׁהַנְּשָׁמָה יוֹצֵאת בוֹ, אֲבָל דַּם הָאֵבָרִים אֵינוֹ אֶלָּא בְּלֹא תַעֲשֶׂה. וְהָנֵי מִלֵּי כְּשֶׁפֵּרַשׁ מִן הָאֵבֶר וְיָצָא לַחוּץ, אוֹ שֶׁנִּצְרַר בַּחֲתִיכָה, אוֹ שֶׁפֵּרַשׁ מִמְּקוֹמוֹ וְנִתְעוֹרֵר לָצֵאת וְנִבְלַע בְּמָקוֹם אַחֵר, אֲבָל אִם לֹא פֵּרַשׁ וְלֹא נִצְרַר, מֻתָּר.

In the blood of a domestic animal and of a wild animal too there is no prohibition of karet (excision at the hand of Heaven), save in the blood of life, with which the soul goes out; but the blood of the limbs is only under a negative commandment. And these words apply where it separated from the limb and went outside, or where it was gathered in a piece, or where it separated from its place and was roused to go out and was absorbed in another place. But if it did not separate and was not gathered, it is permitted.

Se’if 2ב׳

לְפִיכָךְ מֻתָּר לֶאֱכֹל בָּשָׂר חַי בַּהֲדָחָה בְּלֹא מְלִיחָה, וּבִלְבַד שֶׁלֹּא יְהֵא בּוֹ מֵהַחוּטִין שֶׁדָּם בָּהֶם, שֶׁהַדָּם שֶׁבַּחוּטִין הוּא כְּכָנוּס וְעוֹמֵד בִּכְלִי וְע"ל סי' ע"ו.

Therefore it is permitted to eat raw meat with rinsing, without salting, provided that there be nothing in it of the threads that have blood in them; for the blood that is in the threads is like blood gathered and standing in a vessel. And see below, siman 76.

Se’if 3ג׳

הַשּׁוֹבֵר מִפְרַקְתָּהּ שֶׁל בְּהֵמָה, אָסוּר לֶאֱכֹל מִבְּשָׂרָהּ חַי אֶלָּא אִם כֵּן מוֹלְחוֹ יָפֶה. וְעַל יְדֵי מְלִיחָה מֻתָּר אֲפִלּוּ לִקְדֵרָה, וְלִצְלִי מֻתָּר אֲפִלּוּ בְּלֹא מְלִיחָה. הַגָּה: וְנָהֲגוּ לְהַחְמִיר לְחָתְכוֹ (וּלְמָלְחוֹ) אַף בִּצְלִי. וְהוּא הַדִּין אִם חוֹתֵךְ בָּשָׂר מִבֵּית הַשְּׁחִיטָה קֹדֶם שֶׁתֵּצֵא נַפְשָׁהּ (ר"ן) יֵשׁ אוֹמְרִים שֶׁיֵּשׁ לִזָּהֵר לְכַתְּחִלָּה לִשְׁבֹּר מַפְרֶקֶת הַבְּהֵמָה אוֹ לִתְחֹב סַכִּין בְּלִבָּהּ כְּדֵי לְקָרֵב מִיתָתָהּ מִשּׁוּם שֶׁמַּבְלִיעַ דָּם בָּאֵבָרִים (בִּנְיָמִין זְאֵב וּבֵית יוֹסֵף בְּשֵׁם שִׁבּוֹלֵי לֶקֶט).

One who breaks the nape of an animal — it is forbidden to eat of its flesh raw, unless he salts it well. And by way of salting it is permitted even for the pot; and for roasting it is permitted even without salting. Hagah [Rema]: And they have been accustomed to be stringent, to cut it (and to salt it) even in roasting. And the same law applies if he cuts flesh from the place of slaughter before its life has gone out (the Ran). There are those who say that one should take care at the outset to break the nape of the animal, or to thrust a knife into its heart, in order to hasten its death, because it drives blood into the limbs (Binyamin Zeev and Beit Yosef in the name of Shibbolei haLeket).
