Se’if 1א׳
נִטַּל הַכָּבֵד, טְרֵפָה, אֶלָּא אִם כֵּן נִשְׁתַּיֵּר כְּזַיִת בִּמְקוֹם מָרָה וּכְזַיִת בִּמְקוֹם חַיּוּתוֹ שֶׁהוּא תָּלוּי בּוֹ, וְיִהְיוּ כִּשְׁנֵי זֵיתִים הַלָּלוּ כָּל אֶחָד שָׁלֵם בִּמְקוֹמוֹ, אֲבָל אִם הָיָה מִתְלַקֵּט אוֹ כִּרְצוּעָה אוֹ מְרֻדָּד, טְרֵפָה.
If the liver was removed, it is a tereifah (an animal with a fatal defect), unless there remained an olive's bulk in the place of the gall bladder and an olive's bulk in the place of its life, by which it hangs; and these two olives' bulk must each be whole in its own place. But if it was gathered up a little here and a little there, or like a strap, or beaten flat, it is a tereifah.

שִׁעוּר זֶה דְּכִשְׁנֵי זֵיתִים אֲפִלּוּ בְּשׁוֹר הַגָּדוֹל, וּבְעוֹף הַכֹּל לְפִי גָּדְלוֹ וְקָטְנוֹ. (עַיֵּן לְעֵיל סי' כ' ס"ב וסי' ל"ד ס"ד).
This measure of two olives' bulk applies even in a large ox; and in a bird it is all according to its size, whether large or small. (see above, siman 20, se'if 2, and siman 34, se'if 4)

יָבֵשׁ הַכָּבֵד עַד שֶׁנִּפְרָךְ בַּצִּפֹּרֶן, טְרֵפָה, וְהוּא שֶׁיָּבֵשׁ כֻּלּוֹ וְלֹא נִשְׁתַּיֵּר כַּזַּיִת בִּמְקוֹם מָרָה וְכַזַּיִת בִּמְקוֹם חַיּוּתוֹ. הַגָּה: וְאִם יָבְשׁוּ אֵלּוּ הַב' זֵיתִים לְבַד, נַמֵּי טְרֵפָה; נִמּוֹק הַכָּבֵד, דְּהַיְנוּ שֶׁדָּם יוֹצֵא מִבְּשַׂר הַכָּבֵד שֶׁנִּמּוֹק וְהָיָה לְדָם, טְרֵפָה (רוֹקֵחַ), אַף עַל פִּי שֶׁנִּשְׁתַּיְּרוּ ב' הַזֵּיתִים, דְּסוֹפוֹ לִרְקַב הַכֹּל (ד"ע). יֵשׁ אוֹמְרִים כָּבֵד שֶׁקָּשֶׁה כְּאֶבֶן, טְרֵפָה (רוֹקֵחַ וְעַיֵּן בֵּית יוֹסֵף וד"מ), וְהוּא שֶׁלֹּא נִשְׁתַּיְּרוּ בָּהּ ב' זֵיתִים הַנִּזְכָּרִים שֶׁלֹּא נִתְקַשּׁוּ.
If the liver dried up until it crumbles under the fingernail, it is a tereifah — and that is where the whole of it dried up and there did not remain an olive's bulk in the place of the gall bladder and an olive's bulk in the place of its life. Hagah [Rema]: And if these two olives' bulk alone dried up, it is likewise a tereifah. If the liver decayed — that is to say, that blood comes out of the flesh of the liver, which has decayed and turned to blood — it is a tereifah (Rokeach), even though the two olives' bulk remained, for in the end the whole of it will rot (his own opinion). There are those who say that a liver that is hard as a stone is a tereifah (Rokeach, and see Beit Yosef and Darchei Moshe) — and that is where the two olives' bulk mentioned did not remain in it unhardened.
