Se’if 1א׳
אֵין חַיָּב בְּחַלָּה אֶלָּא חֲמֵשֶׁת מִינֵי תְּבוּאָה. וְאֵין חַיָּב אֶלָּא חֲמֵשֶׁת רְבָעִים. וּמִדָּה שֶׁמַּחֲזֶקֶת מ"ג בֵּיצִים וְחֹמֶשׁ בֵּיצָה, מְמַלְּאִים אוֹתָה קֶמַח, וְאוֹתוֹ קֶמַח הוּא שִׁעוּר חַלָּה. וּכְשֶׁמְּמַלְּאִים הַמִּדָּה קֶמַח, תִּהְיֶה מְחוּקָה וְלֹא גְּדוּשָׁה. וְהֵיאַךְ יְשַׁעֲרוּ לָדַעַת שֶׁהִיא מַחֲזֶקֶת מ"ג בֵּיצִים וְחֹמֶשׁ, נִתְבָּאֵר בַּטּוּר א"ח וְעַיֵּן בא"ח סי' תנ"ו וּמִשְׁקַל חֲמֵשֶׁת רְבָעִים קֶמַח הוּא תק"כ דרה"ם מִקֶּמַח חִטִּים שֶׁבְּמִצְרַיִם. הַגָּה: כְּלִי הַמַּחֲזִיק עֶשֶׂר אֶצְבָּעוֹת עַל עֶשֶׂר אֶצְבָּעוֹת, בְּרוּם שָׁלֹשׁ אֶצְבָּעוֹת וּתְשִׁיעִית אֶצְבַּע בְּקֵרוּב, הוּא שִׁעוּר הַחַלָּה. וְכֵן מִדָּה שֶׁיֵּשׁ בָּהּ ז' אֶצְבָּעוֹת פָּחוֹת ב' תְּשִׁיעִיּוֹת אֶצְבַּע (עַל ז' פָּחוֹת ב' תְּשִׁיעִיּוֹת אֶצְבַּע), בְּרוּם ז' אֶצְבָּעוֹת פָּחוֹת ב' תְּשִׁיעִיּוֹת אֶצְבַּע, הוּא הָעֹמֶר. וְכָל הָאֶצְבָּעוֹת אֵלּוּ הֵם רֹחַב גּוּדָל שֶׁל יָד (רַמְבַּ"ם פֶּרֶק ו' דְּבִכּוּרִים).
Only the five species of grain are liable to challah (the portion of dough given to a priest). And they are liable only in five quarter-measures. And a measure that holds forty-three eggs and a fifth of an egg — they fill it with flour, and that flour is the measure of challah. And when they fill the measure with flour, it should be levelled and not heaped. And how they are to estimate, to know that it holds forty-three eggs and a fifth, is explained in the Tur, Orach Chayim; and see Orach Chayim, siman 456. And the weight of five quarter-measures of flour is 520 dirhams of the flour of the wheat of Egypt. Hagah [Rema]: A vessel that holds ten fingerbreadths by ten fingerbreadths, at a height of three fingerbreadths and a ninth of a fingerbreadth, approximately, is the measure of challah. And likewise a measure that has seven fingerbreadths less two ninths of a fingerbreadth (by seven less two ninths of a fingerbreadth), at a height of seven fingerbreadths less two ninths of a fingerbreadth, is the omer. And all these fingerbreadths are the width of the thumb of the hand (the Rambam, chapter 6 of Bikkurim).

חֲמֵשֶׁת מִינֵי תְּבוּאָה מִצְטָרְפִין, שֶׁאִם אֵין בָּעִסָה אֶלָּא חֲמֵשֶׁת רְבָעִים מֵחֲמִשְׁתָּן, מִצְטָרְפִין. בַּמֶּה דְבָרִים אֲמוּרִים, כְּשֶׁעֵרְבָן קֶמַח. אֲבָל אִם לָשׁ כָּל אֶחָד לְבַדּוֹ, וְאֵין בּוֹ כַּשִּׁעוּר, וּמְדַבְּקוֹ לְמִין אַחֵר, אֵין מִצְטָרְפִין אֶלָּא בְּזֶה הַסֵדֶר: הַחִטִּים אֵין מִצְטָרְפִין אֶלָּא עִם הַכֻּסְמִין, וְהַכֻּסְמִין מִצְטָרְפִין עִם כָּל אֶחָד וְאֶחָד. הַשְּׂעוֹרִים מִצְטָרְפִין עִם הַכֹּל חוּץ מֵעִם הַחִטִּים. שִׁיפוֹן מִצְטָרֵף עִם שְׂעוֹרִים וְכֻסְמִין, וְלֹא עִם שִׁבֹּלֶת שׁוּעָל וְחִטִּים. שִׁבֹּלֶת שׁוּעָל מִצְטָרֵף עִם שְׂעוֹרִים וְכֻסְמִים, וְלֹא עִם חִטִּים וְשִׁיפוֹן. וּלְהָרַמְבַּ"ם, כֻּסְמִין וְשִׁבֹּלֶת שׁוּעָל וְשִׁיפוֹן מִצְטָרְפִים. וְאִם לָשׁ כָּל מִין וָמִין לְבַדּוֹ, וְיֵשׁ בּוֹ כַּשִּׁעוּר, וְרוֹצֶה לְהַפְרִישׁ מִמִּין זֶה עַל זֶה, אֵין מַפְרִישִׁין אֶלָּא עַל מִינוֹ. כֵּיצַד, אֵין מַפְרִישִׁין חִטִּים עַל שׁוּם אֶחָד מֵהֶם, וְלֹא מִשּׁוּם אֶחָד מֵהֶם עֲלֵיהֶם. וְכֻסְמִין וְשִׁיפוֹן מַפְרִישִׁין מִזֶּה עַל זֶה, וְכֵן שִׁבֹּלֶת שׁוּעָל וּשְׂעוֹרִים מַפְרִישִׁים מִזֶּה עַל זֶה. הַגָּה: עֵרַב קַב מֵעִסָּה עִם קַב אַחֵר מֵעִסָּה שֶׁאֵינוֹ מִינוֹ, וְחִלְּקוֹ אַחַר כָּךְ וְהוֹסִיף עַל כָּל אֶחָד רֹבַע הַקַּב מִמִּינוֹ, חַיָּב בְּחַלָּה כֵּיוָן שֶׁלֹּא נִצְטָרְפוּ כְּשֶׁהָיוּ מְעֹרָבִים. אֲבָל אִם עֵרַב קַב קֶמַח עִם קַב קֶמַח מִמִּין אַחֵר עַל דַּעַת לְחַלְּקוֹ וְחִלְּקָם וְהוֹסִיף עַל כָּל אֶחָד רֹבַע הַקַּב מִמִּינוֹ, פָּטוּר (טוּר).
The five species of grain join together: for if there is in the dough only five quarter-measures from all five of them, they join together. When is this said? When he mixed them as flour. But if he kneaded each one by itself, and it does not have the measure, and he sticks it to another kind, they join only in this order: wheat joins only with spelt, and spelt joins with each and every one. Barley joins with all except with wheat. Rye joins with barley and spelt, and not with oats and wheat. Oats join with barley and spelt, and not with wheat and rye. And according to the Rambam, spelt, oats and rye join together. And if he kneaded each kind by itself, and it has the measure, and he wishes to separate from this kind for that, one separates only for its own kind. How so? One does not separate wheat for any one of them, nor from any one of them for it. And spelt and rye — one separates from this for that; and likewise oats and barley — one separates from this for that. Hagah [Rema]: If he mixed a kav of dough with another kav of dough that is not its kind, and afterwards divided it and added to each a quarter-kav of its own kind, it is liable to challah, since they did not join when they were mixed. But if he mixed a kav of flour with a kav of flour of another kind with the intention of dividing it, and divided them, and added to each a quarter-kav of its own kind, it is exempt (Tur).
Se’if 3ג׳
חָמֵשׁ רְבָעִים הַלָּלוּ, הַשְּׂאוֹר וְהַסֻבִּין וְהַמֻּרְסָן מִצְטָרְפִין לְהַשְׁלִים, אִם לָשָׁן בְּלֹא הַרְקָדָה, אֲבָל אִם רִקֵּד וְהִפְרִישׁ מֻרְסָן מִתּוֹכָם, וְחָזַר וְעֵרְבָן עִמּוֹ, אֵינוֹ מִצְטָרֵף.
These five quarter-measures — the se'or (the sourdough leaven that makes the dough ferment), the bran and the coarse bran join to complete them, if he kneaded them without sifting; but if he sifted and separated the coarse bran from among them, and then mixed it back in with them, it does not join.
