Se’if 1א׳
מַיִם אֶמְצָעִים, רְשׁוּת; וְהָנֵי מִילֵי בֵּין תַּבְשִׁיל לְתַבְשִׁיל, אֲבָל בֵּין תַּבְשִׁיל לִגְבִינָה, חוֹבָה עַיֵּן בְּיוֹרֵה דֵּעָה סי' פ"ט.
The Law of Intermediate Water-Washing. Containing 3 paragraphs: Intermediate water-washing is optional, and this applies between one cooked dish and another, but between a cooked dish and cheese it is obligatory. (See Yoreh De'ah section 89).
Se’if 2ב׳
בֵּין בָּשָׂר לְדָגִים, חוֹבָה לִטֹּל מִשּׁוּם דְּקָשֶׁה לְדָבָר אַחֵר, וַחֲמִירָא סַכַּנְתָּא מֵאִסוּרָא וְעַיֵּן יוֹרֶה דֵּעָה סי' קט"ז.
Between meat and fish it is obligatory to wash, because it is bad for something else — for leprosy — and danger is more stringent than prohibition. And see Yoreh De'ah, siman 116.
Se’if 3ג׳
כָּל הַדְּבָרִים הַנּוֹהֲגִים בָּאַחֲרוֹנִים נוֹהֲגִים בָּאֶמְצָעִים, בֵּין לְהָקֵל בֵּין לְהַחְמִיר, חוּץ מֵהֶסַח הַדַּעַת שֶׁפּוֹסֵל בָּאֶמְצָעִים מִפְּנֵי שֶׁעֲדַיִן רוֹצֶה לֶאֱכֹל וְיָדָיו צְרִיכִים שִׁמּוּר; וְחוּץ מִנִּגּוּב הַיָּדַיִם, שֶׁאֶמְצָעִים צְרִיכִים נִגּוּב כָּרִאשׁוֹנִים. הַגָּה: וְיֵשׁ שֶׁאָמְרוּ שֶׁאֶמְצָעִים צְרִיכִים מַיִם דַּוְקָא, מַה שֶּׁאֵין כֵּן בָּאַחֲרוֹנִים, כְּדִלְקַמָּן סי' קפ"א (בֵּית יוֹסֵף בְּשֵׁם אָרְחוֹת חַיִּים).
All the things that apply to the last waters apply to the middle waters, whether to be lenient or to be stringent, except for diversion of attention, which disqualifies in the middle waters, because he still wants to eat and his hands require guarding; and except for drying the hands, for the middle waters require drying like the first waters. Hagah [Rema]: And there are those who said that the middle waters require water specifically, which is not so with the last waters, as below, siman 181 (Beit Yosef in the name of Orchot Chayim).
